Crockpot Lasagne (well, close anyway)

A close approximation of real lasagna made in your crock pot.

Ingredients:

1- 10 oz pkg. Lasagne noodles broken into bite size pieces (or use Farfalle)
1 lb. Ground beef
½ lb. Italian sausage
1 onion, diced
1 clove garlic
12 oz mozzarella cheese, grated
12 oz. ricotta (or use Cottage Cheese)
12 oz tomato paste
½ c. water
1/4 salt
½ tsp. Pepper
1 ½ Tbl dried parsley
1 tsp. Basil

Cook noodles for 9 min. Brown sausage and meat; drain. Put in lightly greased crock pot. Add all remaining ingredients. Stir to mix thoroughly. Cover; cook on low 7 -9 hours or on low 3-5 hours.

For an alternative, try defrosting some spinach and using that with it's juices instead of the 1/2 cup of water.

Pizza Dip

Football season is now in week two and before the novelty wears off, it's time to throw a party. Here's a great crock-pot dip that's easy to make and a great variation on the usual cardboard pizza you get from the delivery boy. Start this in the morning when the pre-game festivities begin and it will be ready by half-time.

1 pound lean ground beef
2 cups pizza sauce
8 ounces grated cheddar cheese
8 ounces grated Mozzarella
1 teaspoon dried leaf oregano
1/2 teaspoon dried sweet basil
1 tablespoon cornstarch
Parmesan cheese, optional

Directions:

Brown ground beef well; drain off fat. Combine ground beef with all other ingredients in the slow cooker or crockpot. Cover and cook on LOW for 3 hours.
If desired, sprinkle Parmesan cheese on top.

Crock Pot Cola Chicken

This recipe for cola chicken tastes like barbecued chicken. It's easy too!

Ingredients:

1 whole chicken, about 3 pounds, in pieces
1 cup ketchup
1 large onion, thinly sliced, sweet onions are good.
1 cup cola, Coke, Pepsi, Dr. Pepper, etc.
Salt and Pepper

Directions:

Wash and pat chicken dry. Salt and pepper to taste. Put chicken in Crock Pot with the onions on top. Mix wet ingredients then pour over and cook on LOW 6 to 8 hours.
