MuShu Chicken Wraps

This is a yummy and interesting use of the slow cooker. I've modified it slightly to make to serve it hot, but you could also serve the coleslaw cold.

INGREDIENTS:
1 sweet onion, diced
1 1/2 to 2 pounds boneless, skinless chicken thighs
1 12oz can Chicken Broth
1 cup hoisin sauce
2 tablespoons honey
1/4 teaspoon ground ginger
1 12-ounce bag broccoli coleslaw mix or other asian slaw
Flour tortillas or flatbread (large lettuce leaf can be used too)

Directions:

Place the diced onion in the slow cooker. Place the chicken on top of the onions, pour over chicken broth, and cook on low for 5 to 6 hours or until the meat pulls apart easily with a fork. With a slotted spoon, transfer the chicken and onions to a medium bowl, remove bones, and shred the meat. Reserve the remaining broth.

In slow cooker mix together the coleslaw mix, hoisin sauce, honey, and ginger, then stir in the shredded chicken and onion. Add small amounts of broth until just moist enough to pack into tortilla roll. Heat on low for 30 minutes then serve in Tortilla Rolls.

Orange Roast Pork

Orange Roast Pork

1 (3 ½ lb) pork shoulder roast
1 onion, chopped
6 oz. can frozen orange juice concentrate
¼ cup brown sugar
1 teaspoon salt
¼ teaspoon pepper
2 tablespoons flour
2 tablespoons cold water

Trim roast of visible fat. Layer onions on bottom of 3-4 quart crock pot. Salt and pepper roast then place in crock pot on top of onions. In a separate bowl, mix together thawed orange juice concentrate, brown sugar, salt, and pepper. Pour over roast. Cook on low for 6-8 hours until roast is tender.

Easy Crock-pot Chicken Breasts with Bacon

You probably have all the ingredients for this one at home already. I tried this the other night. It was great with some long grain rice.

4 boneless, skinless chicken breast halves (just slice the whole ones yourself)
1 can cream of chicken soup
8 oz sour cream
1 Tbsp flour
bacon slices

Directions:

Wrap one uncooked bacon slice around each chicken piece and put them in crockpot. Mix sour cream, cream of chicken soup and flour and pour over chicken. Cook on low 6 to 7 hours.

Easy Mac & Cheese in your crock pot

Cooler temps are here and it's time to start looking at some easy to make comfort food. Here's a real simple method to make some Mac & Cheese.

1 lb. elbow macaroni
14 oz. processed cheese spread
10 oz. extra sharp cheddar cheese, sliced
1/2 cup unsalted butter, cut into pieces
4 cups skim milk

Directions:

Boil macaroni in salted water 4 minutes (about half cooked) then drain. Grease down slow cooker then add pasta layering cheese and butter througout then dump the milk on top. Cook 2 hours on high heat. Stir. Cook another 2-3 hours, stirring halfway through.
